Mahleb (mahlep) - also known as mahaleb  is an aromatic spice which grows as a wild plant. Its the seeds of a species of cherry which seeds kernels are about 5mm of diametr. Scientific - prunus mahaleb L. used for thousands of years in bakery in Middle East and in Europe. Popular bakery products in which mahleb is used are Turkish çörek and Greek tsoureki. Also because of its positive effects on health used as a folk medicine. Not only enchains the taste of baked goods with its flavor, but also rich for protein.

Description: Mahaleb, is the kernel of the dried and the cherry-like fruits of mahaleb cherry (Prunus Mahaleb L.)

Physical Analysis:

-Appearance: Oval – eliptical shape with a specific “waterdrop” shape at top of the seed.

-Colour: Yellow and shades of yellow colour, typical color of Turkish Mahaleb.

-Flavour/ Odour: Characteristic mahaleb taste, which is close to bitter almond with partially cherry taste. Free from off flavours or odours.

-Foreign Material: As far as is reasonably practicable, free from foreign material. Purity min. 99%

Processing: Process: Collected, sun dried, cracked, separated from stalks and other foreign bodies. Processing Aids: None.
